RD Recipe: Baked Vegetables

Baked Vegetables


1 bag Brussel Sprouts

1 bag Cauliflower

1 container of Baby Bell Mushrooms

1 container of small Tomatoes

Coconut oil/olive oil spray

Adobo to taste


  1. Half or Quarter the brussel sprouts
  2. Break the cauliflower florets into smaller pieces
  3. Slice mushrooms to desired thickness
  4. Cover a baking sheet with aluminum foil and spray with coconut oil/olive oil spray.
  5. Spread the veggies out over the baking sheets.
  6. Bake at 425 degrees for about 30 minutes.
  7. Enjoy!
